Implementation of the Hazard Analysis and Critical Control Points (HACCP) System in Plants for Processing and Post Processing of Poultry in Colombia

Abstract

The purpose of the hazard analysis and critical control points (HACCP, for its initials in English) system is innocuousness as a guarantee for consumers that food to be ingested is not going to cause harm, provided that the intended use is respected. This system establishes the national and international guidelines to regulate and promote food trade between nations. IS0 22000 adopts the HACCP to guarantee innocuousness. The Health Code in Colombia is established under Act 9 of 1979, and several decrees and resolutions have regulated it since then. Decree 3075 of 1997 by the Ministry of Health suggests using this system and, specifically, Decree 60 of 2002 by the Ministry of Health establishes guidelines for its implementation. This paper addresses the use of HACCP in plants for processing and post processing poultry in the country, based on the fact that Resolution 242 of 2013 by the Ministry of Health and Social Protection mandates the implementation of the system for these establishments.
