Impact of the Training Process on Quality Assurance for Fifty Food-Processing Companies in Bogota

Abstract

Production units (PU) for processing food have a high rate of non-compliance of the rules on food processing. For this reason, the Bogotá Mayor’s Office, through the District’s Department of Economic Development, entered into an agreement with La Salle University in which the impact of the training process in good manufacturing practices, hazard analysis and critical Control Points and ISO 22000 for 50 PU was evaluated. For this purpose, initial diagnosis visits were carried out, and an improvement plan for each PU was established and socialized. Later, a training process was executed and, finally, a second visit for tracking and verification was conducted. As a result of the process, the following improvements were obtained: 14.70 % in physical facilities, 12.70 % in reception controls; 13.50 % in locative hygiene for the process area, 16.70 % in process control, 19.20 % in staff, and 8.70 % in quality documentation, compared to the ideal percentage of compliance. This showed that the training process and the socialization of the improvement plan for each PU, led companies to continuous improvement, thus contributing significantly to compliance with current regulations
