Collagen Extraction in Acid-Base Mediums from Bovine Hooves

Abstract

This article outlines how raw material was demineralized in natural state in this study with 5% and 7% NaOH, and 5% C6H8O7. This is in order to determine which of the two NaOH concentrations was able to adapt the material to be reduced through blending operation. Similarly, the product’s moisture, ashes, fat and protein were determined; in addition, functional tests were applied in order to evaluate the quality of the resulting product. The extraction conditions reflecting the best physicochemical and functional characteristics were the concentration of 7% NaOH with 5% C6H8O7, then subjecting the product to centrifugation, since a high content of protein of approximately 80% was obtained (keratin-collagen) in these conditions
